So we had a technical difficulty with this month's reality AgelessThrival Cuisine episode with Chef Geoff and our host, me Catherine Wylie. Sigh, I forgot to do a sound check with the Ipad and sadly it was on mute so you are getting the script more or less.

We introduced our selves and started talking about edible flowers. It is important that you do not just pick any flowers but do your research to assure what you are adding into any recipe or salad is NOT POISONOUS. Its like mushrooms...you really need to understand what is safe to eat and what isn't.

We added an article from WestCoastSeeds on edible flowers so take a read. Geoff uses an app on Google to find out but it isn't fool proof. And Like any new nutrition you are planning on ingesting check with your health care professional to assure it is safe for you.

We talk about plant based proteins and are cooking a Beyond Burger and a regular sirloin meat burger for comparison in taste. Beyond Burger uses Heme which is an ion-containing compound of the porphyrin class which forms the non-protein part of the hemoglobin and some other biological molecules. This is to give it the taste of meat in a plant based protein.

Beyond Meat's Beyond Burger contains 20g of protein, no soy, no gluten and it is nonGMO. It has 6 g of carbs and 2g of fibre so net carbs is 4. 0 Cholesterol, 390 mg of sodium with 0g of sugar. It is filled with nutrients I went through but you can look it up on the nutrition facts on the back of the packaging. Very nutritious and saving our cattle.

The other plant based protein products we discussed that replace beef and other animals was Lightlife.

2019 is their 40 year anniversary having founded in 1979 to bring plant based protein into being as a pioneer in the field. They offer a burger, sausage, crumbles and more. Next show we will try them and taste test against beyond burger. The price is the same $7.99 Cdn for two patties.

We also talked about the Canadian cattle farmers and their complaint about Beyond Meat calling their products plant based meat. They of course support plant based protein but would like meat kept to the traditional knowledge of animal based and not plant based so we will keep you up on the results. Sustainable, honorable and ethical farming is a must as animals understand their role in the food chain it is just diabolical to cause them terror and harm.

So the more we can turn to plant based protein the better chance our ecosystems have at returning to thrival. so give these options a try as they are delicious and healthy alternatives to meat based options.

Our salad dressing was made of olive oil, honey dijan mustard and garlic. I bought a fresh garlic...just dug up on June 29th and offered at the North Saanich farmers market along with a locally grown organic cucumber. All of the farming down in Saanich area is non poisoned...not necessarily certified organic due to the airport but still grown without using poisons and as natural as possible.

Our salad greens were organic spinach, kale, swiss chard, and arugula with red onion , sliced apple, organic cucumber, organic blueberries and nasturtium flowers, rose petals, geranium flower and a leaf, wild sage, and avocado. The taste sensation was incredible in combo with the dressing. You can make individual salads with the added flowers. Simply gorgeous to look at and eat. So give them a try, but be sure to check what is safe for you to eat. And AVOID what is poison or something you could be allergic to.
